At all times, including while being stored, prepared, displayed, served, or transported, food shall be protected from potential contamination, including dust, insects, rodents, unclean equipment and utensils, unnecessary handling, coughs and sneezes, flooding, drainage, and overhead leakage or overhead drippage from condensation. Pest strips can only be hung above outside doors where no possible contamination of food products can take place. (750.120) Immediate/Onsite
15  Observed the following improper non-food contact surfaces: 1) duct tape on pizza prep cooler, 2) no handle for upright freezer in back, 3) rust on racks in walk in cooler, 4) duct tape on chest freezer in store room, 5) chipped wood on shelving under buffet line. Provide for all food contact surfaces to be smooth, easily cleanable, non-absorbent, corrosive resistant, and light colored. Repair, repaint or replace. Duct tape as a repair is prohibited. 23  Observed the following contact surfaces to be unclean: 1) inside of gaskets of prep coolers in kitchen, 2) inside of deep fryer cabinets, 3) sides of equipment in cooks line, 4) wire racks above pizza prep station, 5) inside of utensil bucket, 6) shelves inside of pepsi cooler in back, 7) wire racks with pizza boxes (room before rest room), 8) tops of chest freezers in smaller room up front. 37  Observed the following wall/ceilings, and attached equipment to be unclean: 1) behind pizza prep station, 2) above racks in front cooks line, 3) behind mixer and chest freezer, 4) walls and ceiling in walk in cooler, 5) grill to fan in walk in cooler, 6) wall under 3-bay sink. Provide for all walls, ceilings, and attached equipment to be in a clean condition. (750.1220) Observed the following wall/ceilings area(s) to be in poor repair: 1) chipped paint behind 3-bay sink, 2) stained ceiling tile throughout kitchen and dining room, back room and smaller room. Provide for all walls and ceilings to be smooth, easily cleanable, non-absorbent, durable, and light colored and be maintained in good repair. (750.1210) Next Inspection
